Burrata and Spring Pea Crostini
1 Loaf French bread or Baguette
I package frozen peas
1 finely diced shallot
1 to 2 tablespoons fresh squeezed lemon juice
salt and pepper to taste
1 - 2 packages fresh Burrata Mozzarella
Slice bread on the bias, brush with olive oil and lightly toast
Meanwhile, combine shallots, peas, lemon juice and salt and pepper in food processor. Pulse until a smooth paste. If too chunky, add a small amount of olive oil. Too much and it will become oily.
Spread pea paste onto crostini and top with a pinch of burrata. Garnish with lemon zest and coarse ground pepper.
