Lemon Bars

Nothing like a little sun on a rainy, windy Fall day! These lemon bars are not too sweet, not too tart, just a lovely light lemon flavor. They’re a combo of two different lemon bar recipes that take what I think are the best of both worlds, homemade AND ease! Enjoy!

For the Crust:

2 sticks butter (if you like a saltier crust, use salted butter!) cut into small cubes, plus more for greasing the glass dish

1 1/2 cups AP flour

1/2 cup granulated sugar

1/4 tsp salt

Cut the pieces of cut butter into the flour/sugar mixture in a large bowl. Use a pastry cutter or even your fingers until the mixture resembles coarse sand.

Grease a 9/13 glass baking dish and press the crust mixture into the pan. Bake in a preheated 350 oven until lightly golden. About 25 minutes.

For Filling:

In a large mixing bowl, whisk together the following ingredients

6 large eggs

3 cups granulated sugar

2 tablespoons fresh lemon zest

1 cup fresh lemon juice (I ended up using 5 lemons)

1 cup AP flour

When crust is slightly cooled, pour in filling. Bake again at 350 until just set.

Let cool in pan and then top with powdered sugar.
