Oven Braised BBQ Pulled Pork

I must be feeling the onset of sunshine and spring because I was thinking about bbq the other day. This recipe is a terrific way to make a rainy day feel like an indoor picnic.

This delicious BBQ shredded pork can be used for bbq sandwiches (I like to pile it on potato buns with creamy coleslaw and pickles) or it can be used for things like nachos or tacos! The possibilities are endless. And it needs very little. Just mix all the ingredients and throw it in the oven while you do anything else!

This recipe is based on one 3lb roast. Double it for more pork!

 

1 Pork Shoulder cut into large pieces (2 inches)

 

Dry rub:

½ C. brown sugar

2 tbls. Garlic powder

2 tbls onion powder

2 tbls paprika

2 tbls kosher salt

2 tbls pepper

1 tsp to 1 tbls (depending on spice tolerance) cayenne pepper

 

Cooking Sauce:

 

¾ C. BBQ sauce

½ C. Chili sauce

1 tbls spice rub

¼ C. apple cider or rice vinegar

8oz. Coca Cola

 

Rub the spice mixture into the pieces of pork and place in a heavy bottomed dutch oven with a fitted lid. Pour in cooking sauce. Cover tightly. Cook in a preheated 325 degree oven for 2 ½ to 3 hours. Once the meat is falling apart to the touch, shred it and remove the fat. Place shredded meat back in the sauce and cook at 350 for another 30 min. uncovered.

 

So good, you don’t even need to add extra BBQ sauce!
